=before you barbecue, marinate red meats in dark beer or garlic infused marinate sauce for at least 45 minutes. Both beer specially dark beer and garlic have antioxidants that are good for you. 

=do not barbecue on high heat. "Low and Slow" should be the watchword. Besides keeping the meats moist, not charring them is a good idea as most carcinogens are  in charred meats.
